Nolen Gurer Payesh Recipe: Authentic Bengali Winter Dessert

Ingredients (serves 4) - 1 litre full-cream milk - 1/4 cup Gobindobhog rice, washed - 150 g Nolen Gur or grated Khejur Patali Gur - 2 bay leaves, 3 green cardamoms - Cashews and raisins
Method 1. Boil milk with bay leaf and cardamom, then simmer for 15 minutes. 2. Add rice and cook on low heat, stirring, until soft and the milk thickens (about 30 minutes). 3. Switch off the heat and let it cool for 3–4 minutes. 4. Stir in the Nolen Gur. Adding gur to boiling milk can curdle it — this is the most important tip! 5. Add cashews and raisins. Serve warm or chilled.
Tips - Use fresh winter Nolen Gur for the best aroma. - Patali Gur gives a slightly firmer, smoky sweetness.
