How to Identify Pure Khejur Patali Gur: 7 Simple Tests

Why purity matters Real Khejur Patali Gur (date palm jaggery) is made only from fresh date palm sap, boiled slowly in winter in rural Bengal. Many sellers mix sugar, hydros or colour to cut cost. Here is how to check at home.

1. Check the colour Pure Patali Gur is deep brown to reddish-brown, never bright golden or pale yellow. A very light colour often means chemicals were added.

2. Smell it Genuine Nolen Gur and Patali Gur has a smoky, caramel, date-palm aroma. Sugar-mixed gur smells plain sweet.

3. Taste test It should melt slowly on your tongue with a rich, slightly salty-smoky taste. If it feels gritty like sugar crystals, it is likely adulterated.

4. Press with your thumb Pure Patali is soft and crumbly in fresh season. Very hard, glassy blocks often contain extra sugar.

5. Water test Drop a small piece in a glass of water. Pure gur dissolves slowly and leaves almost no residue; chalk or soda settles at the bottom.

6. Season matters Fresh Khejur Gur is made only from November to February. Fresh stock sold in summer is a red flag.
